First off, I want to say a sincere thank you for all of the get well comments that I have received on Instagram. You guys (and gals) are eff-ing awesome! It truly warms my heart. If you are unaware, last weekend while working on a recipe, a thick wood butcher block slipped off the drying rack and landed on my toe. As a result, a fun day trip to the ER and 4 stitches. Good news is, I’m healing up. I definitely have trouble moving around but as I said on my IG, it’s tough keeping myself out of the kitchen. So, this week out of my humble kitchen, I present to you my Paleo Lemon Thyme Waffles.

Thyme is probably one of my favorite herbs.  Always has been and always will be. It’s very versatile, as it works in both sweet and savory dishes. Devin can tell you, there was a period of time where I was thyme crazy and sprinkled it on everything: my steaks, chicken, eggs, armpits… well… that was probably an exaggeration but you catch my drift. Today, to show it’s versatility, I decided to make something sweet instead of using it on my armpits. If you cannot tell by your allergies, Spring is here and these Paleo Lemon Thyme Waffles are the perfect way to bring some refreshing flavors to your breakfast table. Let’s get started!

Paleo Lemon Thyme Waffles

Lemon Thyme Waffles:

  • 1 Cup – Otto’s Natural Cassava Flour
  • ¼ Cup – Coconut Flour
  • ¼ Cup – Tapioca Starch
  • ½ Tsp – Paleo Baking Powder (Recipe Here)
  • ¼ Tsp – Salt
  • ¼ Cup – Gold Nugget Ghee (Melted)
  • ¼ Cup – Organic Honey
  • 2 – Pasture Raised Eggs
  • 1¼ Cup – Nut Milk (I used Coconut)
  • 1 Tsp – Pure Vanilla Extract
  • Zest – 1 Whole Lemon
  • Zest – 1 Whole Meyer Lemon
  • 1 Tbsp – Fresh Thyme Leaves

Lemon Thyme Icing:

  • ¼ Cup – Gold Nugget Ghee (Room Temp)
  • 1 Cup – Paleo Powdered Sugar (Recipe Here)
  • Zest – 1 Lemon
  • 1 Tsp – Fresh Thyme Leaves
  • 1 Tbsp – Fresh Meyer Lemon Juice (Strained)

Paleo Lemon Thyme WafflesBefore we get started, let me limp over there so we can talk about these ingredients. Two very important things in this Paleo Lemon Thyme Waffles: lemons and thyme! Do NOT, I repeat, DO NOT substitute with bottled lemon juice, lemon extract or dried thyme. It is not the same. You will lose a lot of the refreshing feel if you do so. I have said this many times, I love fresh ingredients because they really speak for themselves. You have to learn to trust and respect the ingredients. You can definitely make waffles with just Otto’s Cassava flour. The reason I added some coconut flour and tapioca starch is because I prefer my waffles on the crispier side. The additional starch really helps. Let’s make these bad boys!

Waffle Instructions:

To get started, preheat your waffle maker to medium high heat. A lot of times, people crank their waffle iron up to the maximum setting. Usually it burns the batter before it has the time to fully cook and crisp up. That’s why you have to dial it down, allow the moisture to be cooked off and it will produce a crispy waffle with a fluffy inside. Now that your waffle iron is preheating, let’s whip up the Lemon Thyme Waffles batter. Mix all of the waffle ingredients with a mixer. I would recommend against using a food processor with a blade attachment. It has the chance of mincing the thyme leaves into the batter and that’s not what we want. Cook the waffles as instructed per your waffle iron’s factory instructions. While your Paleo Lemon Thyme Waffles are cooking, let’s make some frosting!

Lemon Thyme Frosting Instruction:

Prepping the Paleo Powdered Sugar may be a bit of a chore, but I like to make a big batch of it during the weekend that way I have it when I need it. To make the icing, it’s just as easy as the batter. Throw everything in a bowl and whip it until all the ingredients are thoroughly mixed. If the icing seems a bit runny, add in more powdered sugar until your desired consistency is met. If you prefer a lighter way of eating these waffles, you can drizzle a bit of honey on top or a bit of sweetened mascarpone or ricotta cheese. I don’t like using maple syrup because it is a bit overpowering and can completely takeover the flavors of the Lemon Thyme Waffles. When the waffles are done, plate that baby up and enjoy your refreshing breakfast or lunch or dinner haha. There you have it, my Paleo Lemon Thyme Waffles. Until next time, eat up my friends!
