Then Brainy Belly found Jesse Straight of Whiffletree Farm. Jesse is a force, who raises beef, contented chickens and woods-roaming pigs on a beautiful farm near Warrenton, Virginia. He has introduced us to other grass fed passionate farmers in the area and we now have a good supply of beautiful, meaty beef bones. We add organic vegetables and herbs to round out the flavor, simmer it to perfection, then quickly get it packaged, frozen and ready for you.

We pressure cook our broth which is not the traditional recipe. A shorter cook time limits histamines in the final product and also prevents neurotoxic glutamates which can be an issue with long simmered broth. Gelatin content is high and nutritional analysis/ experience shows it to be equally beneficial as a long cooked version. It is strained and rapidly cooled then packaged in heavyweight BPA-free bags and frozen. Online orders are shipped to you in a sustainable shipping sleeve (no styro!) container with dry ice when needed.

My autoimmune issues were a mystery: for me and for many others now suffering from modern illnesses of uncertain origins. Much like my beloved Nebraska prairie: not just grass and infrequent scrubby trees but a complex eco-system that has found balance over hundreds and thousands of years. (Yes, I am from Nebraska. Never leaves me.) The brain and the belly have a complex but very much connected relationship. And what occurs with one is very much going to affect the other.

Thanks to eating real, nutrient-dense food, my energy and passion are back and I want to share this restorative tradition. Bone broth is soul-nourishing, rich from bones of animals raised on pasture grass, filled with sun and minerals from the earth. Dutch Meadows Organics is located in Paradise, Pennsylvania. They supply us with bones from grass fed beef and pasture raised chickens. I found them via the web so once we were talking about working together, I drove up on a Thursday to talk to Dave Stoltzfus at the PA Dutch Farmers of Wyomissing, where he has a butcher shop market stall. Dave radiates integrity, and his passion for his product is clear. He understood exactly what I was looking for and appreciated my efforts to bring properly made bone broth to market.

The beef displayed in his case is just beautiful; there is really no other word for it. There's little or no of the fat marbling which you usually see proudly displayed by a butcher. Instead the meat is a beautiful fresh color, portions are generous and the prices are fair. And the taste is extraordinary. My family loves these meats and we've changed the minds of several friends who have eaten dinner with us. They felt that they didn't care for grass fed meats, until they tasted a meal from the farmers of Dutch Meadows.
