James Beard Award-winning chef Marco Canora always wanted to offer something from the tiny takeout window at Hearth, his popular restaurant in New York City’s East Village. It took 11 years but the right idea eventually struck: delicious bone broth, served up like coffee in a to-go cup.

Drinking bone broth was a new way of life for Marco personally. A distinguished career in cooking left its indelible marks: too much carb-loading, too much drinking, resulting in gout, high cholesterol, and extra weight. Drinking nutritious bone broth, brewed by Marco himself, became a regular part of his new healthier diet. Inspired by his own rebound, the new and improved Marco was excited to offer his fellow New Yorkers a more nutritious, if not equally addictive, alternative to coffee.

Brodo was born in 2014 from that window overlooking First Avenue, with Marco personally ladling out the first cups. Marco and his team now serve Brodo at several locations, including the original takeout window and the flagship walk-in shop in Manhattan’s West Village. In addition to our shops, you can find Brodo in the frozen section of many grocery stores, or get it shipped directly to your door!

About Marco

As a chef, restaurateur, and cookbook author, Marco Canora promotes delicious, simple, and healthy food. In addition to founding Brodo, he is the owner of Hearth in New York City and a multiple James Beard award-winner, including for Best Chef NYC 2017. Marco is the author of several books, including Salt to Taste: The Key To Confident Delicious Cooking (2009), A Good Food Day: Reboot Your Health with Food That Tastes Great (2014) and Brodo: A Bone Broth Cookbook (2015).

Do you offer larger sizes or wholesale pricing?

Answer: We do, contact us directly.

Where can I find a list of ingredients and nutritional information?

Answer: Nutritional info for each broth is available on its product info page.

How long is it good for?

Answer: Your broth is good for a week in the fridge. Refreeze and it keeps for up to a year.

Does the broth arrive frozen?

Answer: The broth is shipped frozen. Depending on where you're located and the shipment method, the broth will arrive cold to partially frozen.

How do I use it?

Answer: Warm broth is wonderful when you drink it straight from a cup. It's also great for cooking soups, risottos, stews, and more. In your shipment, you'll find a recipe guide full of ideas inspired by ours shops.

How do you keep it cool during shipping?

Answer: Each shipment is kept cold with frozen gel packs and insulation made from eco-friendly recycled denim.

Why do you ship it frozen?

Answer: We use no artificial preservatives, that's why we ship frozen. Depending on where you're located and the shipment method, the broth will arrive cold to partially frozen.

How do I thaw it?

Answer: The easiest way to thaw frozen broth is to simply put it in the refrigerator and let it slowly defrost overnight. For faster results, run the container under cold water to loosen, then empty into a pot and cover. Bring entire contents to a simmer. You can always store and leftover broth in the fridge. Just let is cool before reusing the container.

Do you ship nationwide?

Answer: We ship to all the lower 48 states.

Do you make a vegetarian broth?

Answer: Yes, we offer a delicious meatless broth, made from a certified organic farm-raised seaweed, mushrooms, and organic vegetables. It's 100% vegan and vegetarian.

Does your broth contain apple cider vinegar?

Answer: No. Other broth makers may use apple cider vinegar as a shortcut to extract nutrients from the bones. Our chef and founder Marco Canora thinks this unnecessary. Using the right kinds of bones and cooking for the right amount of time is a more effective way to make a truly nutrient-dense broth.

Why do you call it "Brodo?"

Answer: Simple: Brodo is the italian word for "broth." Historically, Italians have made broth a bit differently from their French counterparts, simmering both meat and bone, not just bones. Our chef and founder, Marco Canora, prefers the Italian method. We specifically use drumsticks, oxtails, and other meaty cuts to make our broth more delicious and more nutrient dense.

Can I refreeze it later?

Answer: Absolutely. We suggest thawing it all and then refreezing in ice cube trays so you can use it more easily for cooking or sipping as needed.

How do I reheat it?

Answer: From the fridge, our broth can go straight into the pot. Once it's cooled, you'll notice that the broth will take on a jelly-like appearance and texture. This is perfectly natural. That's just the gelatin doing it's thing. The broth quickly returns to liquid upon reheating.

Does your broth contain sugar?

Answer: No.

Does your broth contain gluten?

Answer: No.

Does your broth contain dairy?

Answer: No.

Where do your bones come from?

Answer: We get all of our bones from cooperatives and family farms. Our beef bones are from 100% grass-fed animals, fed on open pastures, neverfeedlots, and are free of antibiotics and hormones. Our poultry (chicken and turkey) are certified organic and raised on pasture. They are fed a vegetarian diet free of GMO's, antibiotics, chemical fertilizers, and pesticides.

How much sodium is in your broth?

Answer: Our sodium levels cary slightly, 450 milligrams per 8oz serving. We season to taste and only use mineral-rich sea salt.

What's your return policy?

Answer: Your enjoyment of Brodo is hugely important to us. If you're not satisfied for any reason, please contact us directly and we'll do our best to make it right.

How soon do you ship it?

Answer: To ensure product safety - we only ship Mondays, Tuesdays, and Wednesdays. Orders received after 2pm on Tuesdays will ship the following week.

How is your broth different?

Answer: In a word: taste. Our founder, Marco Canora, is a world-class chef who insists on doing things the right way. We use only top-quality ingredients - bones from pasture-raised, grass-fed animals, whole fresh-cut organic vegetables, and spices. We then slow-simmer these ingredients with an almost equal amount of water (1:1 ratio) for up to 24 hours, depending on the broth (chicken takes less time). Other broth makers may cook for less time; some brew for even longer. We feel our process is the right amount of time to ensure maximum nutrient density - and maximum flavor - in every cup
