Kelly Dimacchia, Chief Bone Maiden of Erie Bone Broth

It began with pain. Kelly Dimacchia had problems with her knees. She did some research and read that a broth made from poultry or beef bones was a good natural remedy for inflammation. In January 2015, she started making it at home. She became a believer and talked it up among her friends, who were eager to be her customers. By May, Dimacchia had a full-fledged business.

The Rocky River entrepreneur named the company Erie Bone Broth, in recognition of the region that provides her ingredients. “I use pasture raised chickens from Tea Hill Farms in Loudonville, grass-fed beef from a farmer in Defiance and locally grown organic vegetables.” Although it’s suddenly trendy, bone broth is nothing new. It has been made for centuries by people the world over who never waste a scrap and get every bit of goodness from the animals they eat.

Dimacchia is now producing 60-gallon batches of the translucent elixir in the Cleveland Culinary Launch & Kitchen. The bones are roasted, then soaked in vinegar and simmered in filtered water for 24–72 hours until they’re soft, a process that extracts all their healthy properties. She flavors the meaty decoction with onions, carrots, celery and herbs. The result is stock on steroids, rich with easily digestible nutrients, collagen and glycine, an amino acid. Advocates say it can help heal leaky gut, aching joints, and autoimmune diseases; promote restful sleep; and improve the condition of skin, hair and nails. “It’s a great recovery drink,” says Dimacchia. “People in the functional medicine department at the Cleveland Clinic are recommending Erie Bone Broth to their patients.” - Kelly Dimacchia, Owner of Erie Bone Broth

What is Bone Broth?

Answer: Bone Broth is a beverage that has been consumed for thousands of years throughout different cultures. Bone Broth is typically made with bones and can contain a small amount of meat adhering to the bones. As with stock, bones are typically roasted first to improve the flavor of the bone broth. Bone broths are simmered for a very long period of time (24-72 hours), with the purpose being not only to produce gelatin from collagen-rich joints but also to release vitamins and minerals from bones. At the end of cooking, the bones should crumble when pressed lightly between your thumb and forefinger. Our Bone Broth is Hand made, chilled to temp, packaged and frozen immediately. We do not use any preservatives or high heat pasteurization.

How do I use Bone Broth?

Answer: That is the great thing about Bone Broth, it is VERY versatile. If you are looking to heal an ailment, such as leaky gut, inflammation, chronic pain it is recommended to drink bone broth on a regular basis generally a 6-8oz per day. You can also cook with it! Bone Broth is a perfect add on to smoothies or a substitute to boxed stocks for any recipe. Think of it as another way for your body to receive vitamins & minerals. BONUS! We do not add any salt to our broths.

If I am drinking Bone Broth on a daily basis, how much should I order for the subscription service?

Answer: If you plan on drinking an 8oz glass per day, based on our 24oz spout pouches, you would need 2-3 bags per week. Some prescribers want their patients to drink 2- 8oz glasses per day, in which case you would need 5 bags per week.

Each certification program has a different set of standards.  Certified Paleo is the Paleo Foundation’s first, most popular, and highest level of certification for Paleo-compliant products.  Certified Paleo Products are products that contain Paleo ingredients, but may have some 21st-century processing or packaging methods allowing for shelf stability.

Grain Free Gluten Free Certified LogoGrain-Free Gluten-Free:

Grain Free Gluten Free Certified products are gluten-free and do not contain any grains of gliadin competitive residues.  All Grain-Free Gluten-Free products have undergone two rounds of audits, including lab tests, and a final review to become approved for the Grain-free Gluten-free Certified Program.

Keto Certified LogoKeto Certified:

The ketogenic diet is a restrictive, demanding diet that can be difficult to maintain, and tolerability of the ketogenic diet is the single most important factor limiting individual acceptance for initiation.  Therefore, improving the tolerability of the ketogenic diet is crucial to preventing diet discontinuation, warranting further investigation into methods for improving palatability, improving the availability and convenience of foods that are compliant with the ketogenic diet, as well as addressing cultural and social acceptance.

The Keto Diet product market may be in a unique position to improve tolerability, especially in social and cultural environments that typically feature carbohydrate-rich “special occasion” types of foods. In 2016, the Paleo Foundation launched the world's first Keto Certified program for products with standards that were developed for adherence to a classical ketogenic diet.
