Tricia Lewis - Founder of Gourmaleo

Chef Tricia Lewis is the founder of Dallas-based paleo meal delivery company Gourmaleo (gor-MAY-lee-O). Lewis is a 2003 graduate of The Culinary Institute of America in Hyde Park, New York. She has cooked her way around the country from San Francisco to Telluride to Austin. Throughout her career, she showed a love for using non traditional ingredients and cooking methods to create new exciting dishes. That passion led her to the challenge of taking normal recipes and creating a near identical paleo version - a real food version - after reworking her own nutritional needs.

As a formally trained chef with over 15 years of cooking in restaurants, hotels and bakeries, Lewis' relationship with food changed completely after developing osteoarthritis in both knees. After two frustrating years of fruitless workouts and thousands of dollars spent in the pharmacy, she began eating a paleo diet ridding the majority of her arthritis symptoms within a matter of weeks. She saw how quickly our bodies can heal after eliminating just a few ingredients. She shared those concepts with friends who began to see positive changes in their own bodies after adopting a paleo meal plan. This gave Lewis the idea to start a paleo meal service to others that were looking for a fresh healthy alternative to convenient, fast meals. With that, Gourmaleo was born.

Gourmaleo (gor-MAY-lee-o) began in Tricia's kitchen in 2012 when she started cooking paleo meals for herself, friends and family. In no time, the demand outgrew her kitchen and she rented a small shared commercial kitchen space in central Dallas. Word of mouth spread quickly from one client to the next. In 2015, she brought in a business partner, Stephanie Houston to expand the product line and streamline marketing and financial operations. She and Houston discussed the concept years prior to see if the concept was viable and discussed options of expanding the service to other Texas cities. After another year of solid growth, in 2016, the cookbook "Gourmaleo" was launched worldwide on Amazon after the addition of Chef Ragin Bryan to the kitchen team. The kitchen team has elevated the menu featuring more items and streamlined delivery to make Gourmaleo DFW's most long standing paleo meal service.

2017 brings a new larger commercial kitchen space and the new paleo snack line. Gourmaleo is proud to offer snack line ingredients with integrity that are fully Paleo Certified. In the age of elevated food culture, a paleo diet can be challenging. The Gourmaleo goal is to bring more awareness to a paleo lifestyle while making eating paleo a convenient, gourmet experience.

Other prepared meals are less expensive. Why?

Answer: Ingredients: Simply put, the cost of local ingredients raised by ranchers who care about their animals’ well being and organic farming is more expensive than commercial ingredients. Since everything is made from scratch, our meals are often very labor intensive. For instance, our house-cured bacon takes 10 days to make per batch. Portion Size: Our meals are designed for an athletic appetite. Inspired by Crossfit athletes, we know that a meal should leave you FULL without making you uncomfortable. Each meal includes at least 6-8 ounces of protein, plus the accompanying vegetables, starches and/or fats. It’s not uncommon for there to be leftovers if you have a lighter appetite and we offer a smaller portion on most entrees. Convenience: Imagine the cost of what you spend eating last minute convenience foods or eating at restaurants when you don’t feel like cooking. Then add in the cost of gas and the time you spent driving there, waiting in line, eating and driving home. How much is your time worth? Gourmaleo is designed to eliminate those last minute surprise expenses and make eating a healthy, filling meal as simple as opening your refrigerator door. Taste: Gourmaleo meals are not bland meals prepared in bulk that sit on a cooler shelf for days. These are meals prepared by your very own personal chef where flavor and a high end experience is as much of a priority as our ingredients.

What kind of ingredients do you use?

Answer: All of our meats are grass fed, pastured, wild caught, and/or compassionately raised from local ranchers whenever possible. Giving you a direct connection to your food is one of our biggest priorities. Our produce is local and organic when available and we frequent various farmers markets to purchase directly from the farmers as often as possible. The fats we most commonly cook with are extra virgin olive oil, bacon fat, coconut oil, and grass fed butter in moderation. Our bacon is cured in house using pastured pork bellies from local hogs, giving you sugar free, 100% paleo bacon. Everything is made from scratch from the marinara sauce to the chicken stock made in fresh batches every week.

What if I have a food allergy?

Answer: Luckily a paleo diet eliminates many common allergens, however if you have an allergy all ingredients are listed under every menu item as you order. Please note that while we cook 100% grain-free and gluten-free menus, our kitchen is not certified as a gluten free kitchen. Please email us at info@gourmaleo.com if you have questions.

Can I purchase meals for someone else?

Answer: Absolutely. Gourmaleo is a great gift idea for new parents, when you’re in the middle of a move, or for someone who is in recovery from an injury or surgery. We sell gift certificates in $100 increments or you can order for a friend and simply enter their address for delivery.

Answer: We ship anywhere in the United States. Shipping rates are dependent on location.

Now that I've ordered, how soon can I expect my shipment?

Answer: We ship on Mondays and Wednesdays so you can expect your box within 3-5 business days.

About Us :

Established in 2010, The Paleo Foundation was first organized for the purpose of improving the tolerability of the paleo diet, and to help adherents easily identify products that met its basic tenets.  Since then, thousands of products have been certified through the Certified Paleo, Keto Certified, and lab -tested Grain-Free Gluten-Free certification programs.

Disclosures:

100% of  Paleo Foundation revenue is generated through certifications.  We do not accept donations, corporate sponsorships, or financially benefit from the sales of any certified products, product giveaways, or partnerships with industry contacts or retailers for the purpose of maintaining the integrity of an impartial certification standard.

Certified Paleo logo Certified Paleo:

Each certification program has a different set of standards.  Certified Paleo is the Paleo Foundation’s first, most popular, and highest level of certification for Paleo-compliant products.  Certified Paleo Products are products that contain Paleo ingredients, but may have some 21st-century processing or packaging methods allowing for shelf stability.

Grain Free Gluten Free Certified LogoGrain-Free Gluten-Free:

Grain Free Gluten Free Certified products are gluten-free and do not contain any grains of gliadin competitive residues.  All Grain-Free Gluten-Free products have undergone two rounds of audits, including lab tests, and a final review to become approved for the Grain-free Gluten-free Certified Program.

Keto Certified LogoKeto Certified:

The ketogenic diet is a restrictive, demanding diet that can be difficult to maintain, and tolerability of the ketogenic diet is the single most important factor limiting individual acceptance for initiation.  Therefore, improving the tolerability of the ketogenic diet is crucial to preventing diet discontinuation, warranting further investigation into methods for improving palatability, improving the availability and convenience of foods that are compliant with the ketogenic diet, as well as addressing cultural and social acceptance.

The Keto Diet product market may be in a unique position to improve tolerability, especially in social and cultural environments that typically feature carbohydrate-rich “special occasion” types of foods. In 2016, the Paleo Foundation launched the world's first Keto Certified program for products with standards that were developed for adherence to a classical ketogenic diet.
