Katie was diagnosed with type 1 diabetes when she was 11 years old. She quickly realized that processed foods marked “low-sugar” or “sugar-free” still contained a sizable amount of carbohydrates (because of white flour or other high-glycemic ingredients), and that artificial sweeteners tasted fake and contained nasty chemicals. As an adult, she became increasingly skeptical of processed foods with long ingredient lists, many of which look like they were created in a lab.

Katie began baking at home simply using LESS sugar, and experimented with naturally low-carbohydrate ingredients. By monitoring her blood sugar levels throughout the day, Katie can literally measure the effect foods have on her body, giving her a unique perspective as she designs recipes for treats and snacks.

More and more, we are all realizing how important a diet of whole foods is to living a long, healthy life. This has inspired Katie to take action and create great-tasting snacks made of real ingredients that will make you happy inside and out.

Cocoa is one of nature’s superfoods, containing 2.5 times more immune-system boosting antioxidants than blueberries, lentils, and garlic combined. Naturally occurring theobromine acts as a mood-elevator, while magnesium supports your heart, brain, and bones.

Flax seeds and chia seeds are a terrific source of omega-3 fatty acids, a nutrient which is essential to health but which our bodies cannot produce. Omega-3 fatty acids help build healthy cell membranes, especially in the brain. Healthy cell membranes are essential for proper nutrition and detoxification, controlling the extent to which nutrients can enter cells and wastes can get moved out. Omega-3s have also been found to offer protection against heart disease and stroke, and recent studies suggest positive associations between omega-3s and a variety of inflammatory conditions, including IBS, autoimmune diseases like rheumatoid arthritis and lupus, and some cancers. 3

You’ll find flax seeds in our No-Grain Granola and Seed and Nut Bars, and our Seedy Crackers contain both flax seeds and chia seeds.

Sunflower seeds, pumpkin seeds, sesame seeds and almonds are a great source of trace minerals such as zinc, magnesium, manganese, copper and selenium, and Vitamin E compounds. The minerals are required to jump start a range of metabolic reactions associated with proper digestion and nutrient uptake, and Vitamin E compounds are powerful antioxidants that protect against tissue degeneration and premature aging.

Our No-Grain Granola and Seed and Nut Bars contain all four of these ingredients. Almonds are a main ingredient in our Cocoa Nib Cookies.

Coconut and coconut oil contain a type of fat known as medium chain triglycerides (MCTs). MCTs are easily converted by the body to energy, and provide a long-lasting fuel. In truth, the body prefers to convert fats to cellular energy rather than glucose. A number of studies have shown that MCTs like those found in coconut products can promote the body’s tendency to burn fat, and when the body regularly burns fat there is a positive association with effective weight management.

Honey is indeed a form of sugar. However, when compared with sugar’s glycemic value, honey’s is significantly lower. Agave has also been found to have a lower glycemic value than other sugars, but agave consists of only fructose molecules. In fact, commercially produced agave syrup may have an even higher fructose content than high fructose corn syrup. Fructose can cause problems as it cannot be efficiently metabolized, and studies have connected fructose to insulin resistance, fat accumulation around the liver, and other liver problems. 2 Honey contains a combination of sugar molecules – glucose, fructose and sucrose – which are more easily metabolized. In addition, since the other ingredients in Keep It Real Food Co. products contain plenty of protein, fat, and fiber, it helps ensure blood sugar and insulin rise much more gradually, if at all. Honey is also unique in that unlike other sweeteners, it is minimally refined.

Organic Coconut palm sugar is a low-glycemic sweetener that comes from the nectar of the flower buds of coconut palm trees. Because it is minimally processed, the color, sweetness, and flavor can vary, but it is very high in nutrients and minerals. It is a rich source of potassium (electrolytes), magnesium (blood-sugar regulating), zinc (brain-power), and calcium (strong bones). It contains Vitamins B1, B2, B3 and B6, and over 16 amino acids (the building blocks of life).
