Stacey Schlaman and Liberated Team

Founded in early 2015, Liberated Specialty Foods launched in the quiet countryside outside of the town of Madison, Alabama by Stacey Schlaman, a mother of two.

A longtime advocate of avoiding gluten to improve gut health for some individuals, and eating Paleo™ to improve physical fitness, Stacey more recently had learned about some of the effects of eliminating starches and sugars, through the writings of Elaine Gottschall in her book “Breaking the Vicious Cycle”, and Dr. Natasha Campbell-McBride, MD in her book “Gut and Psychology Syndrome”.

Stacey opted to focus on diet to improve the health of her family, particularly her daughter who suffers from a number of conditions including Celiac’s disease and psoriasis.

This process led her desire to offer grain-free food options, conveniently, to those everywhere.

“It was hard, in the beginning,” said Schlaman, as she described her motivation for the business.

”Nobody wants to be different. It is hard being the only kid at a pizza party that can’t eat pizza, or at a birthday party that can’t eat cake. I want people to be able to eat what they need…what their diet requires…without having to feel left out.”

One day, after a busy week where she had spent all day in the kitchen preparing food to take on vacation, she resolved to find a way to make it possible for others to be able to eat the way their body needed them to, and be able to live a “normal” life. “I was in tears. Not only are the ingredients expensive and hard to find at many grocery stores, but when you have to cook everything from scratch yourself, it is incredibly time consuming. I remember thinking about how I wished there was somewhere I could go to just buy this stuff…at least once in a while! I found some comfort through online groups and found hundreds of mothers just like myself all feeling the same way. After much prayer and meditation, I knew that this was my calling.”

A few weeks later, she and her husband purchased an old church in the country, and began renovation to use as the location of what is now the first commercial bakery of its kind.

At Liberated Specialty Foods, we want to provide processed food that can be consumed by those on special diets like Paleo, SCD™ and GAPS™. We want you to know:

Our products do not contain most starches. Not only are we gluten and grain free, we also avoid potato, rice, artificial preservatives, artificial sweeteners, and a number of binding or leavening agents that other special diets approve. Our motto is we go “Beyond Paleo™.”

Our Paleo branded products contain no dairy products what-so-ever. The SCD™ and GAPS™ products may include the following dairy products: approved cheeses, farmers cheese, ghee, and our own specially made yogurt. These items may contain low levels of lactose ranging from trace, almost undetectable levels to around 0.5% in our farmers cheese. As a reference, milk would contain around 5% lactose. As always, we will list all of the ingredients in each product on that product's page.

We sweeten our food only with honey, fruit and/or vanilla extract. Not only do we avoid refined sugars, but we don’t use any complex sugars or low calorie sugar substitutes such as stevia, saccharine, aspartame, erythritol, or xylitol.

Our products contain no unlabeled ingredients. Often, nutritional labels will contain vague ingredients such as “spices” or “natural flavors” or contain small amounts of unlabeled starches used as flow or anti-caking agents. We go out of our way to make sure that our labels are all inclusive and specific.

In general, we believe that non-processed food is preferable to processed food. We offer specialty foods that are “processed” to be consumed occasionally, not as an everyday staple.

Is your food (SCD™, GAPS™, Paleo) compliant?

Answer: There is much discussion and some debate on what exactly is and is not legal under the various diets, including whether processed food itself is legal. See the individual item for ingredient details. We have tried to make our products suitable for those on Paleo, GAPS™, SCD™ “type” of diet, in that our food is: Gluten/Grain Free Free of added starches. See our promise contains only sugar from honey or fruit Artificial sweetener free Artificial Preservative Free Our Paleo offerings are completely casein and lactose free. Our other products use dairy products with little or no lactose (SCD complaint).

Is your food sugar free?

Answer: We only sweeten our products with honey and fruit.

Is your food lactose free?

Answer: Our Paleo offerings are casein and lactose free. Our other products may use dairy products that may contain fractional lactose, like hard cheeses, farmers cheese or our own specially made yogurt (all SCD compliant).

Is your food GMO free?

Answer: All of our nuts and vegetable products are GMO free. However, our non-paleo, SCD™-like products may contain dairy products that we can not ascertain the GMO status of.

Why is your food so expensive?

Answer: Compare us to the competition! In general, this type of product will be more expensive simply because most of our baked products are based out of almonds, cashews, and coconut, as opposed to starch, rice or grain. Additionally: We attempt to source high quality ingredients from reputable suppliers who meets our strict requirements--If it's on the "Dirty Dozen" list, we make every attempt to purchase Organic Fruits and Veggies We don’t use any artificial preservatives, which means we have to refrigerate and freeze them to provide a reasonable shelf life We don’t use fillers--only whole ingredients in our kitchen Our manufacturing process is all by hand, which is time consuming. We don’t have assembly line or automation equipment. Our process is different than traditional ‘grain based’ bakeries and their equipment can’t always be used in our process All cheeses are grated in-house to ensure they are free of anti-caking ingredients and 100% pure Olive oils are Organic and cold-pressed Our almond milk is made is made in-house to ensure its purity

Why are your portions so small?

Answer: While our baked goods may be physically smaller in size, they are filled with nutrients and calories comparable to a larger, traditional item. This is because we often use denser ingredients like nuts in place of grains. You’ll find that we often have higher fat content than traditional items, but a reduced carbohydrate content.

Will you bake something special upon request?

Answer: Contact me! If I can find the time and the ingredients, I’ll do it! An additional charge will apply of course.
