About 10 years ago, I began my research in the world of health and nutrition in order to find a healthier and happier me.  I became aware of gluten intolerance and realized I had a lot of the ailments associated with it. I also realized refined sugar, dairy, soy, and grains also caused me discomfort and I now had to eliminate my favorite foods from my diet. I knew I could not live without cake and frosting and 6 years later Mindful Cupcakes was created. Now, a single mom of two little girls, Mindful Cupcakes is changing the world one cupcake at a time! My daughters can eat cake every day for their health and I have never looked or felt better eating 3 cupcakes a day! Numerous children suffering from severe allergies have been able to enjoy cake and frosting for the first time in their lives! If you are allergy free, this is an amazing way to eat cupcakes every day and actually lose weight and gain energy!
