And so did we!

So we set on a mission to create a muffin that you can make quickly (in less than 2 minutes) yet without compromising on the quality of the ingredients… After months of research, our muffins came to life – a healthy and yummy muffin, that is Paleo, soy free, dairy free, in which every ingredient has been carefully selected, and it takes less than 2 minutes to prepare. And most of all, it comes in 3 different yummy flavors!

Keeping a Paleo diet is a challenge. Even more when trying to make meal plans for a family and survive throughout the day without falling for the temptations that are all around. After trying everything on the market, Shira decided to give it a try and make her own special treat. We spent significant time sourcing our ingredients, to make sure they are all natural, high quality and fit the needs of our muffins. Since we care so much about high quality, we wanted to be sure our ingredients don't have any hidden additives or preservatives.


We use blanched almond flour. Our almond flour is non-GMO, certified gluten-free and ultra-finely ground. Our almonds are US grown (California) and the flour is prepared with no chemicals, no additives and no fillers whatsoever.

How it's made - The process of creating the almond flour starts with high quality almonds. Then the almonds are stripped off of their skin and carefully and finely ground into a white high quality flour.


Coconut flour is a great alternative for wheat flour. We use only organic coconut flour, that is also naturally gluten free. Coconut flour is high in fiber and is considered a complex carbohydrate with a low glycemic index. Our coconut flour is unsweetened and contains no sulfites or any other additives whatsoever.

How it's made - Dried coconuts are being separated of their meat which is then removed of the fat and finally grounded into a fine flour.


Our maple syrup is certified organic and it comes from the hills of New Hampshire near the Connecticut river. Maple syrup is a natural sweetener that contains naturally occurring minerals such as potassium and is sodium free. Unlike highly processed white sugar, our maple syrup is pure and contains no additives or preservatives whatsoever.

How it's made - Maple syrup is a natural sap harvested from maple trees. Check out this fascinating video that shows the harvesting process in details. Our maple syrup is then dried and finely ground into powder.


Eggs are a key ingredient in our recipe and they contribute to the total protein amount in the muffin. We use powdered whole eggs that contain no additives, fillers, preservatives or any other types of chemicals (such as anti-caking agents). Just whole eggs in a different form.

How it's made - Our whole egg powder is made out of fresh, natural & organic eggs, that are freeze dried and then finely ground.

Cream of Tartar

Cream of tartar is a naturally occurring crystalline byproduct of wine production and it is often used in baking. We prefer using cream of tartar as it gives our muffins a nice and fluffy texture. Another reason is the fact that it is a natural ingredient as opposed to the common baking powder that has different chemicals in it, including different starches that we really try to avoid.

How it's made - Cream of tartar crystals naturally form in wine barrels after the wine-making process. The crystals are then scraped off the barrels and ground into the cream of tartar powder we use.

Baking Soda

Also known as sodium bicarbonate, baking soda is a popular ingredient in cooking and baking. Baking soda is a natural mineral and it has been used in kitchens throughout the world since ancient times.

How it's made - Baking soda is found in spring water. Natural deposits of the mineral occur naturally in the Green River Formation near the Rocky mountains.

What's the best way to prepare my muffin?

Answer: Well, it is so simple - just add water in a coffee mug and microwave for 90 seconds. That's it!

How much water shall I add to the mix?

Answer: The recommended amount is about 4 measuring tablespoons or 1/4 measuring cup of water. Note that the resulting texture may vary based on the amount of water you use, your microwave power or the coffee mug. We recommend that you note to yourself the amount of water you use when making your first muffin. If the outcome is too moist, then just use a little less water with your next muffin, or microwave for an extra 5-10 seconds. If it's too dry, add a little bit of water. In any case, we promise that the muffin will always taste heavenly :)

What size coffee mug shall I use?

Answer: We recommend using a 13-15oz mug. When heated in the microwave, the batter rises to about 3 times the original height and then settles down into a yummy muffin. Using a large enough coffee mug will ensure nothing spills out in the process.

Does it matter if the water is cold, warm or hot?

Answer: Nope. It works just fine with tap water.

My muffins don't come out exactly like yours. What shall I do?

Answer: There are 3 things you can do to improve the muffin's texture. If your muffins are too moist, you may try either of the three (but not all together) Change the amount of water - use a bit less water for a dryer texture Change the microwave duration - microwave for an extra 5-10 seconds for a bit of extra fluffiness Change the size of coffee mug - a wider mug will make a dryer texture

Does your product contain nuts?

Answer: Yes, all of our muffins use almond flour and coconut flour. Additionally you will find walnuts in the Nutty Maple and pecans in the Pecan Clover.

Does your product contain eggs?

Answer: Yes, all of our muffins contain whole organic eggs.

Does your product contain gluten?

Answer: We use ingredients that are naturally gluten free. However at this point our products are not gluten free certified.

How can you claim that your product is Paleo if you need to use a microwave to prepare it?

Answer: Well, for a starter, cavemen did not have internet either, yet we still use it, right? :) But the real answer is that, believe it or not, microwave cooking is in many cases better for you than oven baking or even steaming. Main reason is that microwaving is one of the most healthful ways to cook your food while keeping most of its nutritional value. This has been long ago proven over multiple studies. Bottom line, we think that Paleo needs to be healthy but also practical, and as long you are using your microwave in a safe way and with the right tools, then you should not fear of it. And if this is not yet good enough, you can always make yourself Paleo pancakes using the same muffin mix!

Can I make your muffins in a regular oven?

Answer: MuffinElse muffins were designed for the microwave. Our muffins come in single serving packets and serve a specific need - have a freshly made muffin whenever you want one, no special preparations needed. Because sometimes you just want a muffin ;-) But stay tuned to our blog and social media since we always come with new fresh ideas on how to improve the muffins or even how to make Paleo pancakes with the same muffin mix!!

What happens if I don't like the muffins I already purchased?

Answer: We're sorry you feel this way :( We want you to be fully satisfied with your purchase and really hope that you enjoy the muffins as much as we do. Should you happen to not like the product for any reason, please contact us at and we will fully refund your purchase.

Can I choose the Pick Up option for shipping?

Answer: If you are able to pick up your purchase in person, we will not charge any shipping. However, you will need to be able to come to Plano, TX to pick it up. Otherwise, please choose one of the other shipping options.

Do you ship internationally?

Answer: Unfortunately, at this point we can only ship within the United States.

When will I receive the muffins I ordered?

Answer: We are making every effort to ship out purchases as soon as possible. All purchases received before noon Central Time, will be shipped out using United States Postal Services the same day. However, we will still make the effort to ship out purchases received until 4pm Central Time but cannot guarantee same day shipment in this case. We normally use First Class Mail or Priority Mail (2-day) depending on availability, affordability and the type of shipment you choose during the checkout process. If you have any question about your shipment, don't hesitate to contact us.
