Our founder, Naomi Seifter, has battled chronic, food-allergy-related illness since she was a child. Her search for a solution to improve her health led her to discover the beneficial effects of an allergen-free diet. Although she finally understood how to improve her eating habits, it was nearly impossible for her to eat anything that wasn’t prepared in her own kitchen.
To offer a solution, Naomi opened Picnik in 2013, an Austin-based food trailer in a repurposed shipping container. The concept was simple: wholesome food that’s convenient and nutritious. Picnik began serving gluten-free grab-and-go breakfast and lunch items, butter coffee, and bone broth, all with a focus on sourcing locally and using premium ingredients.
As one of the first paleo-friendly concepts in Austin, Picnik quickly gained a devoted following (especially for our grass-fed butter coffee), and in 2016, we opened our first brick-and-mortar restaurant. The following year, we hit grocery stores nationwide to share the goodness of our butter coffee recipes, and opened a second food trailer. Picnik continues to grow and impact the wellbeing of thousands of people.

Why do you use butter instead of milk or cream in your drinks?
Answer: Grass-fed butter has a different genetic makeup than conventional butter. It is a healthy, nutrient dense source of fat, similar to an avocado! Grass-fed butter contains nutrients such as Vitamin K and butyrate that can actually help reduce inflammation and contribute to good heart health! It's a source of omega-6 and omega-3 fatty acids as well as other fat-soluble vitamins and trace minerals.
What makes Picnik coffee different?
Answer: Picnik coffee is a blend of organic coffee, grass-fed butter, and MCT oil. When combined with coffee, the ingredients work together to keep your energy level sustained for hours, without the typical coffee crash. Butter coffee is known to boost cognitive function, support fat burn, balance mood and hormone levels and reduce hunger. It’s one of our favorite drinks on the planet, and we’ve dedicated our lives to sharing it with you.
What kind of butter do you use in your products?
Answer: We use only unsalted, grass-fed butter to make our coffee light and creamy. This replaces the traditional splash of milk or cream.
What is MCT oil?
Answer: “MCT” stands for “medium-chain triglycerides,” saturated fatty acids that are easily digested and sent to the liver to be converted into fuel for the body, rather than stored as fat. Coconut oil is a great source of MCTs, but concentrated MCT oil is what we use in our products because it’s packed with the shortest-chain MCTs, so it can be transformed into fuel in a snap. MCTs are known to have a range of health benefits including: improved cognitive function, increased energy and metabolic function, balanced hormone levels, and maintenance of a healthy weight.
What kind of coffee do you use in your Butter Coffee?
Answer: We pride ourselves on utilizing not only the highest quality of ingredients possible, but ones that are also sustainable and mindfully sourced. We use direct trade organic cold brew coffee.
How much caffeine is in each bottle?
Answer: Each bottle contains nearly the equivalent amount of caffeine as a twelve ounce cup of coffee. The Cappuccino has 160mg, the Mocha contains 150mg, and the Chai includes 140mg of caffeine.
Why do you use maple syrup as a sweetener?
Answer: Maple syrup is a natural, unrefined sweetener. Relative to refined sugars, maple syrup scores low on the glycemic index, which means that it impacts your blood sugar levels less drastically and doesn’t make you spike or crash quite the same way. Unlike refined sugars, maple syrup supplies trace minerals and antioxidants.
Does the Dirty Chai have coffee in it?
Answer: Yes! The dirty chai is our take on the traditional chai drink combined with coffee for a delicious, spiced flavor.
What is gellan gum?
Answer: Gellan gum is a used in the food industry as an anti-settling agent, thickener or stabilizer. It’s vegan, Kosher and Halal approved. It is used in other popular natural beverages and we use it in small doses to keep our Butter Coffees blended and safe at room temperature until they reach your doorstep.
What is quillaja extract?
Answer: Quillaja saponaria, the soap bark tree, is an evergreen native to central Chile. Its extract is used in the food industry to add foam or creaminess, or as a stabilizer. We use it in small doses to keep our products smooth and creamy.
Do your products contain gluten, nuts, or any other allergens?
Answer: Our products are always free from gluten, nuts, soy, and corn. They do, however, contain milk.
What is the shelf life of your products?
Answer: As soon as you get our products home please make sure to place them in your refrigerator to give them the longest shelf-life. Our products can remain unopened in your refrigerated for up to 12 months. Upon opening please use our products within two weeks.
How do I store your products?
Answer: Please refrigerate Picnik products once you receive them to ensure that they have a long shelf-life. Once a product has been opened, please keep it refrigerated and enjoy it within two weeks after opening.
Are your products certified organic?
Answer: At Picnik, we always strive to use the highest quality ingredients that are available to us. While most of the ingredients used in our products are certified organic, the products themselves are not.
Is Picnik Butter Coffee supposed to be drank warm or cold?
Answer: Our Butter Coffee is meant to be enjoyed hot or cold. Drink it cold straight out of the refrigerator, or heat it up for a more traditional coffee experience. If you heat up Picnik Butter Coffee please pour it in a microwave-safe mug first or heat in a saucepan on the stovetop, do not put the Picnik Butter Coffee bottle in the microwave.

Established in 2010, The Paleo Foundation was first organized for the purpose of improving the tolerability of the paleo diet, and to help adherents easily identify products that met its basic tenets. Grain Free Gluten Free Certified products are gluten-free and do not contain any grains of gliadin competitive residues.
