Use this flour cup-for-cup in any recipe and you’ll never know it was gluten free!  The special blend of gluten free flours is the base for the most delicious, amazing textured baked goods, both savory and sweet.

The kitchen has always been my second home. Strange as it may sound, it has always been the place where I felt most comfortable and relaxed. Baking is my niche. I was (and still am) the official birthday cake maker for family and friends, and fell in love with the art of baking even more after culinary school. I’ve had dreams about opening up a bakery. However, with the myriad of specialty cupcake and bake shops sprouting up all over the U.S., I didn’t think I had a chance to compete with them. However, early in 2009, I was diagnosed with Celiac disease and my world turned upside down – in a good way! I now had a focus and new mission to baking – Gluten Free!

I spent several years mastering the perfect blend of wholesome, gluten free flours to create a finished product with superb taste and texture. Unlike many gluten free products on the market today, XO Baking Co.™ is the first company to use Organic Coconut Flour in every single product. After I was diagnosed with Celiac disease, I was determined to create baked goods that tasted like it contained gluten, just like the ones I used to eat growing up. I thought to myself, why should I, or anyone with Celiac disease, have to sacrifice taste? I had a mission. I was more determined than ever to create a product line that people with and without celiac disease or gluten intolerance would enjoy. Bottom line – the taste and texture had to be spot on.

XO Baking Co.™ owner Lindsey Deitsch is a Certified Health and Nutrition Coach, professional chef and baker, an accomplished athlete/marathon runner and marathon training coach and is a Black Belt!  Lindsey has been coaching and running marathons for over 10 years, and during that time, has learned the role that a healthy diet plays in the success of an athlete. She has used this knowledge to teach others the role a balanced diet and lifestyle play in overall health and wellness.

Lindsey received her Bachelors degree in Public Health from UC Berkeley and is a graduate of the Westlake Culinary Institute where she studied under Chef Cecilia de Castro. Lindsey worked as a Nutritionist at UCLA’s Clinical Research Center for over 4 years. She received her training and certification as a Health Coach from the Institute for Integrative Nutrition in New York City.

Are your products Gluten Free?

Answer: Yes! Our baking mixes are Certified Gluten Free through the Gluten Free Certification Organization (GFCO). We test every one of our products to ensure safe consumption for those with gluten allergies, intolerance and Celiac Disease.

Are your products Kosher?

Answer: Yes, all our mixes certified kosher (OU).

Do your baking mixes contain milk and egg ingredients?

Answer: All of our baking mixes contain no milk or egg products ingredients. We are not a certified Vegan company.

Do your products contain trans-fat, artificial colors or flavors?

Answer: All of XO Baking Co.’s products are 100% trans fat free, and never contain any artificial colors or flavors of any kind.

Do your baking mixes contain GMO ingredients?

Answer: All of our baking mixes are GMO Free.

Are your products NUT Free?

Answer: Our products are free from both peanuts and tree nuts. Most of our mixes do contain coconut.

Is coconut safe for people with Tree Nut Allergies?

Answer: The Food Allergy and Anaphylaxis Network states that coconut, the seed of a drupaceous fruit, has typically not been restricted in the diets of people with tree nut allergy. However, in October of 2006, the FDA began identifying coconut as a tree nut. The available medical literature contains documentation of a small number of allergic reactions to coconut; most occurred in people who were not allergic to other tree nuts. If you are not sure whether you can tolerate coconut, consult with your doctor first.

Do you have sugar free products?

Answer: Yes, the All Purpose Flour Blend contains no added sugar.

Can I use your All Purpose Flour in my Grandmas chocolate cake recipe?

Answer: Yes! Our All Purpose Flour Blend has been formulated to replace regular All Purpose (wheat) flour, cup for cup, in any recipe. No need to toss your old cookbooks. Use it for cakes, cookies, muffins, brownies, pie crust, quick breads, scones, pancakes, waffles and much more!

How do you properly measure your All Purpose Flour Mix?

Answer: Spoon the flour into your measuring cup and level off with a knife. You should never use your measuring cup and scoop it directly into the flour bag. This may cause unwanted packing, resulting in an overly thick batter.

Do I need to add xanthan gum to my recipes while using your All Purpose Flour?

Answer: The beauty of our All Purpose Flour Blend is that xanthan gum is already inside. Simply take any recipe (cake, cookie, etc.) and just replace the flour cup for cup. It’s that easy!
