My husband and I have a favorite ritual on Saturday nights. We make Paleo desserts together. It’s a fun challenge since our ingredient list is fairly limited, and even though I’m the one who loves to cook in the family, his love and instinct for making treats far surpasses mine.

Enter, my husband’s Raw Paleo Cookie Dough Recipe invention, driven by his insatiable sweet tooth and boundless, scrappy creativity! And of all the countless concoctions we’ve made together, this one is the most decadent. And it’s amazing how much it tastes like raw cookie dough! When I tried this, I felt like I was cheating on Paleo! But don’t worry Paleo police, this one’s totally legit. And it satisfies that cookie dough craving.

The secret ingredient that makes it taste like cookie batter is grass-fed butter. Butter has gotten a bad rap in mainstream health circles but it’s the source of many vitamins, minerals and healthy fats. And there’s also the cancer-fighting properties of conjugated linoleic acid. I’ve even read that it protects the stomach from gastrointestinal infections.

So have your butter and eat it too! Without guilt.

This recipe makes enough for one serving, and because of the richness of this dessert, it was all we could eat. But you can double or quadruple the ingredients to make more.

Ingredients for Raw Paleo Cookie Dough:

  • 2 tablespoons of creamed coconut (this is different from coconut oil or butter, it’s just coconut meat that’s creamed)
  • 1 tablespoon of raw, local honey
  • a handful of dried cranberries or 1/2 cup Paleo Friendly  Enjoy Life Chocolate Chips
  • 2 teaspoons of butter ( I used organic, raw, cultured butter)
  • 4 tablespoons of sugar-free sunflower seed butter
  • a handful of raw pumpkin seeds
  • a sprinkle of cardamon and vanilla powder
  • a sprinkle of good quality vanilla salt

Idiot-proof Directions:

Mix all the ingredients together in a bowl in any order. Make sure the butter is softened.

This is the perfect dessert for movie night or when you’re having rebellious cravings for non-Paleo treats. And if you have an iron-chef style creative dessert night at your house, try adding an egg or two and baking it at 350 for half an hour to make cookies out of it. Let me know how it turns out?
