Easy Bell Pepper Quiche

Do you love quiche, but hate the headache of making a grain-free crust? Use bell peppers instead.

Bell Pepper Quiche is perfect for guests and branches, and totally cute to boot. You can use any color of pepper, and you can still add whatever ingredients into your egg quiche as you please.

Heck, you can even eat this for dinner. Adults can do that you know!

Ingredients:

One bell pepper makes one serving.

•   2 eggs scrambled

•   Spices to taste: Cumin, salt, curry powder, pepper

•   The meat of choice: 2 ounces of chopped sausage, 1 or 2 bacon slices, or chopped ham.

•   Veggies of choice: Green peppers, tomatoes, scallions, spinach, broccoli, etc.

Directions:

Combine eggs, meat, veggies, and spices in a bowl.

Cut the top of the pepper and hollow out.

Pour in the egg mixture and stand peppers on a parchment paper lined baking sheet.

When you buy the peppers make sure they can stand up on their own, or cut the bottoms so that they can.

Bake at 350 for 35 minutes.

Enjoy your pepper quiche!!
