Don't get me wrong, my kiddo has a set of pipes on him. It ranges from a whisper, sweet singing voice to ear-bleeding screams of a banshee. School starting only means one thing...summer is ending.
It's only a matter of time before the pumpkin spice king regains his reign and it's Han Solo season as far as the eye can see. This recipe is still within the realms of summer and the end of stone fruit and berry season. Pie is universal. Pie is life. Pie is happiness. So, to share some smiles, I've created a Paleo Stoneberry Pie.
What's a Paleo Stoneberry Pie? A tart and sweet mix of a stone fruit medley and blueberries. But wait....it tastes so creamy. Why did you ask? It's my secret ingredient...a sexy little herb called tarragon. Underestimated and underappreciated, this little gem tossed my pie right over the delicious cliff. And all that gorgeous sugar on top? Not exactly paleo and definitely optional. It's my interpretation of a galaxy. Dev has been obsessed since No Man's Sky came out and to celebrate, I've made my Paleo Stoneberry Pie AKA Galaxy Pie. Let's start baking!
Paleo Stoneberry Pie:
Dough:
1 Cup - Otto's Cassava Flour ¾ Cup - Organic Gemini Tiger Nut Flour ½ Cup - Gold Nugget Ghee (Chilled & Cut) 2 Tbsp - Honey 3 Tbsp - Dessert Farms Raw Camel Milk¹ 1 - Pasture Raised EggFilling:
1 - Large Yellow Peach (Diced ½ Inch Pieces) 1 - Large Nectarine (Diced ½ Inch Pieces) 3 - Apricots (Diced) 1 Cup - Blueberries 1 Tbsp - Gold Nugget Ghee ¼ Cup - Honey² 1 Tbsp - Fresh Tarragon (Minced) ½ Tsp - Pure Vanilla Extract Zest of 1 Lemon Juice of Half a LemonOptional:
Sugar Sprinkles for DecorNote¹ - Feel free to use milk or dairy-free milk of your choice.
Note² - You can add more Honey if you prefer sweeter or add some stevia.
To create this Paleo Stoneberry Pie, you will want to find the freshest fruit you can around. The riper the fruit, the sweeter the pie. I prefer a sweeter pie, so I picked extra ripe stone fruits. They are much easier to pit while ripe, as well. As for blueberries, riper or even slightly wrinkled ones work very well for pie filling. I actually prefer it because it has more flavor. I used small pie tins, but you can definitely make a full-sized pie out of it. I prefer hand pies/mini pies/portable pies because it has a more even filling and crust ratio. Not to mention, this crust is to die for. It dissolves in your mouth! My mouth is watering just thinking about it. Let's get started!
