Our Story
The story behind my jerky began in 2004 when my wife was diagnosed with celiac disease. Her diagnosis forever changed how our family ate, shopped, and lived (for the better).
Up until the last few years, it proved very difficult to find clean, healthy snacks where we didn’t have to compromise on flavor. Jerky, a family favorite, was no exception. It was impossible to find a product without soy, cane sugar, or other preservatives that we were trying to avoid. Did you know most jerky brands don’t even use real smoke? Needless to say, when label watching for allergy concerns, we were coming up short—and hungry. So, I decided to make my own.
Since then, I’ve been passionately dedicated to making a product that is truly Paleo, but more importantly, that tastes delicious. There are plenty of healthy jerky brands out there, but they all tasted “healthy”. I truly believe it’s our unparalleled taste and texture that set us apart. I’m confident that when people say they don’t like jerky, they’ve just never tried it like mine.

Our mission is simple: To create a snack that’s as pure as it is tasty.
We are committed to making clean eating on-the-go as accessible and delicious as possible. That’s why we craft our jerky with you in mind— the health-conscious snacker. Each batch of PREVAIL is made with only the best cuts of meat, allergy-friendly ingredients, and a serious love for jerky. Allergy friendly
Soy whaaat? We are 100% soy free. Because we know how hard it is to find healthy, delicious snacks—let alone ones that are allergy friendly. We take food allergies seriously. That’s why we went a step further and became a certified member of the Gluten Free Food Program (Formerly The National Celiac Foundation) . We want you to go out of our way to make sure you have peace of mind with every bite.
Clean Ingredients
Jerky was pretty much the first snack ever created over 600 years ago. Six centuries later, and our ingredient list looks pretty similar. It’s not because we’re lazy but because we believe in jerky the way it was supposed to be made: clean ingredients, no additives, made with authentic smoke. And where we get our ingredients from is just as important to us. Our organic spices come from all over the world, our beef comes from family-owned farms in New Zealand, and our jerky is made proudly (with love) in Chicago.
Unparalleled Flavor
We don’t believe in smoke and mirrors, but we do believe in cherry wood smoke. That’s where most of the flavor comes from. All smoke aside, we use lots of other unique ingredients like matcha and lemongrass sichuan to make this unlike any jerky you’ve ever tried. Our *secret* blend of spices also happens to make the meat extremely tender. No more jaw-breaking jerky.

Our jerky is made in small batches but you’ll eat it in big handfuls. Because we know good things in life take time. Good jerky included. We’re not in a rush, but we know when eating this you might be. So snack easy knowing this snack was cooked sloooowly but surely, without any additives.
Prevailing Influence
We care about making a positive impact on our planet. So we’re starting by working in our local Chicago community to help create a better understanding of where our food comes from. We volunteer in a community garden in hopes to advocate for clean ingredients, real food and overall wellness. We’re doing our part to make our world a little healthier, one community at a time.

Is your product gluten free?
Answer: Funny you ask...our jerky is certified gluten-free with The Gluten-Free Manufacturing Program (GFMP), endorsed by the National Celiac Association.
Does your product contain soy?
Answer: Soy whaaaat? Our jerky is completely soy free. We use organic coconut aminos, a popular Paleo soy sauce substitute to give our Umami and Lemongrass Sichuan their amazing unique flavor.
Where is your product made?
Answer: All of our jerky is made locally in the Heartland of America.
Is your product Organic?
Answer: All of our marinades are 100% Organic, and blended with 100% Grass-Fed, Grass-Finished non GMO beef. Next question.
Does the jerky need to be refrigerated?
Answer: Since there are no artificial preservatives it is best to refrigerate our product if you don’t eat it in one sitting...but we won’t judge if you do.
What preserves the jerky if it doesn't have preservatives?
Answer: Natural sugars and salts help cure the meat, we then smoke it with Cherry Wood to naturally preserve it. (The natural smoke also happens to add tons of flavor.)
What does Grass-Fed, Grass-Finished mean?
Answer: Most meat is “Grass-Fed” but it’s “Grass-Fed, Grass-Finished” meat that’s special. Grass-Finished refers to what cattle are fed in the last period of their lives. Most cattle are fed grain toward the end to help them put on weight. However, when they are grass finished, they are kept on the pasture, which results in higher quality (and tastier) meat.
Where does your meat come from?
Answer: Since all of our beef is Grass-Fed and Finished, we have to source it from an environment where the grass is healthy and nutrient-rich year-round. This led us all the way to the milder climates of New Zealand where nutrient-rich grasses like alfalfa, clover, Flinders grass, Mitchell grass and rye grass grow all year. We source all of our meat from family farms in New Zealand, that pride themselves on being naturally pastured raised.
Does your meat have added Hormones or Antibiotics?
Answer: Since our cattle is from New Zealand where the climate is ideal all year round, cattle are raised in great conditions. They are healthy, happy, and therefore don’t require any antibiotics or hormones. Fun fact: Did you know GMOs were banned in New Zealand?
What is the Gluten Free Food program?
Answer: We are a proud certified Gluten-Free member of Gluten-Free Manufacturing program (GFMP), recognized by The National Celiac Association. They are a 501(c) 3 non-profit organization dedicated to educating and advocating for individuals with celiac disease and non-celiac gluten sensitivities, throughout the nation. They also engage in other activities related to educating the public about celiac disease/non-celiac gluten sensitivities and improving the quality of life of those diagnosed with the disease.
What is Keto Certified?
Answer: We are proudly Keto Certified. What does that mean? Snack products must not contain more than 6g net/effective carbohydrates per serving which is permissible for use of the Keto Certified label.
Are you Cane Sugar free?
Answer: Yes! We use coconut sugar to add just the right amount of sweet to our products. Coconut Sugar rates a 35 on the low-glycemic index vs cane sugar which rates 65 on the same scale.
What is Paleo Certified?
Answer: Certified Paleo is the Paleo Foundation’s most popular and highest level certification for Paleo-compliant products. Certified Paleo products are products that contain Paleo ingredients and are grain free, dairy free, cane sugar free, soy free, additive free, and no flavor enhancers.

About Us :
Established in 2010, The Paleo Foundation was first organized for the purpose of improving the tolerability of the paleo diet, and to help adherents easily identify products that met its basic tenets. Since then, thousands of products have been certified through the Certified Paleo, Keto Certified, and lab -tested Grain-Free Gluten-Free certification programs.

Certified Paleo:
Each certification program has a different set of standards. Certified Paleo is the Paleo Foundation’s first, most popular, and highest level of certification for Paleo-compliant products. Certified Paleo Products are products that contain Paleo ingredients, but may have some 21st-century processing or packaging methods allowing for shelf stability.
Grain-Free Gluten-Free:
Grain Free Gluten Free Certified products are gluten-free and do not contain any grains of gliadin competitive residues. All Grain-Free Gluten-Free products have undergone two rounds of audits, including lab tests, and a final review to become approved for the Grain-free Gluten-free Certified Program.
Keto Certified:
The ketogenic diet is a restrictive, demanding diet that can be difficult to maintain, and tolerability of the ketogenic diet is the single most important factor limiting individual acceptance for initiation. Therefore, improving the tolerability of the ketogenic diet is crucial to preventing diet discontinuation, warranting further investigation into methods for improving palatability, improving the availability and convenience of foods that are compliant with the ketogenic diet, as well as addressing cultural and social acceptance.
The Keto Diet product market may be in a unique position to improve tolerability, especially in social and cultural environments that typically feature carbohydrate-rich “special occasion” types of foods. In 2016, the Paleo Foundation launched the world's first Keto Certified program for products with standards that were developed for adherence to a classical ketogenic diet.
