Accurate net carbohydrate testing in products has extreme nutritional importance, especially in light of the current demand for convenient ketogenic foods. Several analytical techniques have been proposed for carbohydrate analysis, including high-performance liquid chromatography (HPLC), evaporative light-scattering detection (ELSD), and glycemic index. However, these carbohydrate analysis modes can suffer several drawbacks, including instability, insufficient sensitivity, improper application, and highly variable responses from individuals, making carbohydrate analysis in foods a problematic task.

However, the High-Performance Anion-Exchange Chromatography (HPAEC) has emerged as a powerful tool to evaluate carbohydrates in foods. The HPAEC method is the current gold standard for scientific net carbohydrate testing. Here, we offer food brands the opportunity to submit their products and quantify their “keto” claims with accuracy using an HPAEC assay for net carbohydrate testing.
