PRIMAL KITCHEN™ Greek Vinaigrette. What happens when you take healthy, vitamin-rich greens and flavor them up with conventional salad dressings? Our Story

For 20 years now, I’ve enjoyed a daily 20-ingredient salad made up of turkey, salmon or tuna, sometimes some nuts like almonds or walnuts, along with tons of veggies like bell peppers, broccoli, cucumbers and artichokes. Although I love my trusty balsamic vinegar and olive oil topping, I’ve also searched far and wide for healthy and tasty salad dressing alternatives. Unfortunately, I’ve run into one of two scenarios. Either the dressings are laden with industrial seed and vegetable oils like canola, sunflower, corn and soy oil – the primary instigators in all manner of chronic disease – or they boast out-of-this-world health and ingredient claims but tasteless, bland “flavor.” I noticed the same dearth exists in condiments like ketchup, mayo and BBQ sauce. Sure, tasty enough options exist, but they all compromise your health and longevity!

So I set to work cooking up Primal-inspired salad dressings and condiments full of healthful, natural fats, superfoods, antioxidant-rich, high-ORAC-scoring herbs and spices… with no offensive, synthetic vegetable and seed oils and no artificial colors, flavors or fillers! The first product I set out to reinvent was mayonnaise – the holy grail of healthy fats. The complete lack of acceptable mayonnaise in-store today is appalling. Most options contain canola oil, soybean oil, sugar, HFCS… the list goes on. For Primal Kitchen Mayo, I chose to use one of my favorite superfoods – avocado oil – instead of canola or soybean oil. Combine that with organic, cage-free eggs, organic vinegar and salt and we’ve got one awesome tasting mayonnaise! Healthy mayo… who knew?

WHY DID YOU CHOOSE AVOCADO OIL?

Answer: Full, rich, lingering flavor aside, we chose avocado oil for its fat composition, phytosterols and polyhydroxelated fatty alcohols, all of which are anti-inflammatory in nature. It’s also notably high in Vitamin E and monounsaturated omega-9 fatty acids. In a recent study, both high and low doses of avocado oil enhanced alpha-carotene, beta-carotene and lutein absorption from a salad by as much as 15 times compared to a salad without avocado oil.

HOW LONG DOES PRIMAL KITCHEN MAYO LAST IN MY CABINET BEFORE I OPEN A JAR?

Answer: Primal Kitchen Mayo is good for 9 months, unopened. (We dare you to attempt to keep a jar that long.)

DOES IT NEED TO BE REFRIGERATED? HOW LONG DOES IT LAST IN THE FRIDGE AFTER OPENING?

Answer: Yes, after you open your jar of mayo, it needs to be refrigerated. Depends on your appetite for awesome tasting mayo. At company headquarters, not too long! We recommend you consume within 60 days of opening.

IS YOUR VINEGAR DERIVED FROM CORN?

Answer: Heck no! We use vinegar derived from Non-GMO beets.

IS PRIMAL KITCHEN MAYO GLUTEN FREE?

Answer: You bet!

IS PRIMAL KITCHEN MAYO NON-GMO PROJECT VERIFIED?

Answer: Yes! We are officially non-GMO Project Verified.

WILL THE MAYO FREEZE IN TRANSIT?

Answer: If you live in a cold climate, your product may arrive frozen. Fear not! Simply refrigerate upon receipt and stir before enjoying. We could have chosen fillers and artificial preservatives to avoid this issue, but we don't think it's worth the sacrifice. Real food ingredients = separation

HOW DO YOU MAKE YOUR AVOCADO OIL?

Answer: First, we cold press the meat of the avocado and we use the fruit that comes from this “first press.” (Note: The remaining fruit is often mixed with hexane and pressed a 2nd or 3rd time and sold as less expensive oil. We ONLY use 1st pressed oil, not the 2nd or 3rd press, and our oil is never extracted with hexane.) After the meat has been pressed, we chill it slightly so the oil will start to separate from the pressed avocado meat. Next, the mixture is passed through a large centrifuge where the pure oil is separated out from the pressed fruit. It requires multiple passes through the centrifuge to obtain pure oil, but the added time is worth it. Think of the centrifuge like a cream separator. Using a centrifuge extracted process preserves the integrity and high-nutrient content of the oil.

WHERE DO YOU SOURCE YOUR AVOCADO OIL FROM?

Answer: Our avocados are sourced from handpicked, organically grown, premium avocados. We are working on obtaining our organic certification.

IS YOUR AVOCADO OIL HEAT AND LIGHT STABLE?

Answer: Yes! Our avocado oil is naturally heat stable and is protected from the elements in a beautiful dark glass bottle.

WHAT IS THE SHELF LIFE OF YOUR AVOCADO OIL? DOES PRIMAL KITCHEN AVOCADO OIL NEED TO BE REFRIGERATED?

Answer: It’s good for 18 months unopened. Once opened, we recommend using within a year. No need to refrigerate.

Answer: We chose a three-phase fill instead of sneaking in any strange emulsifiers, binders or gums to get a perfect emulsification. It requires a little shaking on your part, but we think it’s worth it. We chose oil of oregano because it’s one of Mark’s favorite ingredients. And with good reason! It has tons of medicinal and antioxidant properties.
