Carrot Cake Protein Balls

Protein. We all need it, but it’s better when it’s in a delicious form. These Protein-Packed Carrot Cake Protein Balls contain just the right amount of protein, and it also offers you a good serving of healthy fat, as well from the Pili nuts.  You can enjoy these carrot cake protein balls as a snack, or as a post-workout protein boost. 


Carrot Cake Protein Balls

Ingredients:

2 cups shredded carrot

12 Medjool dates

½ cup raisins

½ cup Pili Nuts

2 tablespoons Primal Palate Pumpkin Spice

8 tablespoons (8 servings) collagen powder (Sports Research Collagen )

Shredded coconut for rolling.

Directions:

Blend all of the ingredients in a food processor.

Place mixture in the freezer for 30 minutes.

Form the mixture into balls.

Roll the balls in a bowl of shredded coconut.

Store in an airtight container in the freezer.
