Enhanced Paleo Breakfast Sandwich

I have a confession to make: my guilty pleasure is a Micky D’s Sausage, Egg and Cheese McMuffin. If you are not already aware, consuming wheat and dairy is a highly  punishable offense in Paleo court, but we have found a loophole. The solution is this Enhanced Paleo Breakfast Sandwich.

What is an Enhanced Paleo Breakfast Sandwich? It is a glamorized version of a Paleo Sausage, egg and cheese “McMuffin”. Growing up in Hong Kong, my brother and I went to second shift school, so our first meal of the day is usually lunch. That being said, breakfast foods were a special treat on rare occasions. From time to time, our parents would surprise us with breakfast in the morning with sausage, egg and cheese McMuffins. That’s why it holds a special place in my heart.

As time goes by, adults tend to develop a more sophisticated palate and this is where the Enhanced Paleo Breakfast Sandwich comes in. We are going to replace and add some additional flavors to help “enhance” the taste of the sandwich. We are going to replace that god awful cheddar with flavorful goat cheese, as well as adding some sweetness to round out the flavors. A balance of sweet, savory, spicy and tang. This is one of my go-to breakfast sandwiches because it is extremely easy and extremely delicious! Let’s get started!

Enhanced Paleo Breakfast Sandwich

1 to 2 – Mikey’s Original English Muffins

¼ to ½ lb – Mulay’s Breakfast Sausages

1 Tbsp – Maple Sugar

½ Tsp – Crushed Red Pepper

¼ Tsp – Smoked Paprika

½ Tsp – Fresh Sage (Minced)

Fresh Ground Black Pepper

2 to 4 – Pasture raised/Free Range Eggs

Kasandrinos EVOO

Garlic and Herb Goat Cheese (Optional)

D‘Evereux Foods Jalapeno Jam

Enhanced Paleo Breakfast Sandwich Instructions:

Enhanced Paleo Breakfast Sandwich1.) First things first. I like to thaw out my Mikey’s Muffin. Allow 10-15 minutes to completely thaw out.

2.) While waiting for the English Muffins to thaw, in a mixing bowl, mix together breakfast sausages, maple sugar, crushed rep pepper, smoked paprika and fresh sage (you can substitute with ¼ Tsp Dried Rubbed Sage). Mix everything together thoroughly and let the flavors meld together. Form the sausage into patties.

3.) In a skillet over medium heat, heat 2-3 tbsp of EVOO. Wait until the oil is hot then crack eggs into the hot oil. I like my eggs sunny side up or over easy. For sunny side up, spoon hot oil over the egg whites until they are not jiggly. Once that happens, spoon hot oil over the yolk a few times.

4.) Remove the eggs from heat once they have reached desired done-ness. In the same skillet, cook the previously made sausage patties until the are cooked all the way through.

5.) In a toaster (you can follow Mikey’s instructions), I toast the muffins until they are slightly brown. Spread a layer of goat cheese and spicy jam on to the muffins. Add a sausage patty, a fried egg and top it off with a crumble of goat cheese, jam and crushed red pepper. There you have it, my Enhanced Paleo Breakfast Sandwich. Merriam Webster defines food as “something that nourishes, sustains or supplies.” That can describe so many things. So many things in life “nourish, sustain and supply” us. In my case, it’s actual food. Food is more than just mere calories and energy for our bodies. Food is love, food is life, food is happiness. Food, good food, is created in love and gives love.
